Pumpkin Muffins

Holly's Pumpkin Muffin Recipe
   Preheat oven: 325 degrees
Filling:   Mix together in medium sized bowl.  Set aside.
   1   8oz.  cream cheese (can use reduced fat)
   1/3 cup sugar
   1 Tbsp. plain flour
   1 egg
   2 to 3 tsp. grated orange peel

Pumpkin Bread:

   1 cup cooked pumpkin  (you can use canned pumpkin- NOT pumpkin pie filling!)
   1/2 cup vegetable oil
   2 1/4 c. flour
   1 and 1/2 cup sugar
   2 eggs
   1/2 tsp. salt
   1/2 tsp. cloves
   1/2 tsp. cinnamon
   2 tsp. baking powder
   1 cup chopped pecans

Grease and flour two medium size loaf pans, or use muffin tins.  (cup cake papers are great!)
Layer pumpkin mix, filling, pum. mix, filling, ending with mix.
BAKE: Muffins-about 25 minutes  (small muffins 17 minutes)
            Loaves: about 1 hour.  (Insert toothpick to see if center is done)
Store in refrigerator.  Enjoy!  Great with coffee or spice tea.


Mexican Caviar:  This is a great summer like salsa.  Serve with corn chips or tostitoes or even Ritz type crackers.  It tastes so fresh and summery.  Great for a cookout!
1 med.  onion, chopped
1 green bell pepper, chopped
1 bunch green onions, chopped
1 small can chopped mild chilies
1 tablespoon minced garlic
1 or 2 fresh tomatoes, chopped  (or you can use 1 can diced tomatoes)
1 (8 ounce) bottle zesty Italian dressing
1 (15 ounce) can black beans, drained
1 (15 ounce) can black-eyed peas,
1 (15 ounce) can kernel corn, drained
chopped fresh cilantro
salt and pepper to taste
minced garlic to taste
1 small jar black olives, sliced  (optional)
In a large bowl, mix together onion, green bell pepper, green onions,  peppers, garlic,  tomatoes, zesty Italian dressing, black beans, black-eyed peas.  Add seasonings. Cover and chill in the refrigerator approximately 2 hours. Toss with desired amount of fresh cilantro to serve. 

Camy's Chocolate Chip Cake

1 yellow "Pudding in the cake" cakemix
1 small box instant chocolate pudding
1/2 cup sugar
3/4 c. vegetable oil
3/4 c. water
4 large eggs
8 oz. carton sour cream
6 oz. pkg. chocolate chips

Grease and flour (well) bunt cake pan.
Combine first three ingredients.
Add oil and next three ingredients and stir until smooth.
Stir in chocolate chips.
Pour batter in bunt pan.
Bake 350 degrees for one hour.
Cool 15 minutes before removing from pan.

May drizzle with melted chocolate or sprinkle with
powdered sugar.
